Ingredients
- Eggplants - 2 pieces
- Carrot - 1 piece
- Onion - 1 head
- Tomatoes - 3 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Khmeli-suneli - to taste
- Garlic - 5 cloves
- Cilantro - 1 bunch
- Safflower Oil - 3 tablespoons
Step by Step guide
Step 1
Slice the eggplants into small rounds.
Step 2
Cut the carrot into thin strips.
Step 3
Slice the onion into half-rings.
Step 4
In a well-heated pan with oil, sauté the carrot.
Step 5
Add the onion and sauté until golden brown.
Step 6
Add the eggplants, stir, and cover with a lid. Simmer on low heat for 7–10 minutes.
Step 7
Make incisions in the tomatoes and pour boiling water over them.
Step 8
Peel off the skin.
Step 9
Cut into small cubes.
Step 10
Add the tomatoes to the eggplants and simmer for another 3–5 minutes.
Step 11
Slice the garlic and add it to the vegetables.
Step 12
Season with salt and pepper to taste.

Add khmeli-suneli.
Step 14
Add chopped cilantro and mix everything thoroughly.
