  • Vegetable Oil - 1 tablespoon
  • Eggplants - 3 pieces
  • Lime Juice - 3 tablespoons
  • Soy Sauce - 3 tablespoons
  • Brown Sugar - 2½ tablespoons
  • Minced garlic - 3 cloves
  • Rice Noodles - 6 oz
  • Lettuce leaves - 8 pieces
  • Carrot - 8.8 oz
  • Chopped Mint Leaves - 0.7 oz
  • Chopped roasted peanuts - 1.4 oz

Step by Step guide

Step 1

Heat the oil in a wok over medium-high heat.

Step 2

Add the eggplants and sauté for 20-25 minutes until the vegetables are soft and golden brown.

Step 3

Meanwhile, mix the lime juice, soy sauce, brown sugar, and garlic.

Step 4

Stir until the sugar dissolves. Pour the mixture over the eggplants, cover, and reduce the heat.

Prepare the noodles according to the package instructions, then drain.
