Eggplants Parmesan with Mozzarella
Ingredients
- Eggplants - 3 pieces
- Melted Cheese - 8.8 oz
- Baking Tomatoes - 2 cans
- Garlic - 2 cloves
- Olive Oil - 12 teaspoons
- Wheat Flour - 0.2 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the oven to 428°F.
Step 2
Pour oil into the frying pan and sauté the garlic until golden brown.
Step 3
Add the tomatoes, salt, and pepper. Bring to a gentle boil and simmer on low heat for 15 minutes.
Step 4
Peel the eggplants and slice them lengthwise into 5–6 pieces each.

Coat the eggplants in flour.
Step 6
Sauté the eggplants in olive oil on both sides until they turn a golden brown (keep in mind that eggplants absorb oil).

Slice the mozzarella into thin pieces.

Take a baking dish and lightly grease it with tomato sauce.

Layer the eggplants and then add a layer of mozzarella on top.

Drizzle with tomato sauce and layer more eggplants with tomatoes, then top with a layer of mozzarella.

Bake in the oven until the mozzarella melts and turns a golden brown color (about 30 minutes).
