Eggplants with Bacon and Cheese

Ingredients

  • Eggplants - 2 pieces
  • Bacon - 7.1 oz
  • Tomatoes - 4 pieces
  • Sour Cream - 5.3 oz
  • Hard Cheese - 24.7 oz
  • Mayonnaise - 5.3 oz
  • Herbs - to taste
  • Garlic - 4 cloves
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Cut the eggplant lengthwise into 2 halves. Make cuts along each half without cutting all the way through, sprinkle with salt, and let sit for 30 minutes.

Step 2

Slice the cheese and bacon into thin slices, and cut the tomatoes into half-rings.

Step 3

Rinse the eggplants to remove the salt and pat dry to remove excess water.

Step 4

Place the eggplants on a baking sheet. Between the slices of eggplant, layer bacon, cheese, and tomato.

Step 5

Sprinkle with pepper on top and drizzle with the dressing. For the dressing, mix mayonnaise with sour cream, and add finely chopped garlic and herbs.

Step 6

Bake in the oven for about 30 minutes at 356°F.
