Ingredients
- Eggplants - 2 pieces
- Miso Paste - 2 teaspoons
- Shrimp - 7.1 oz
- Scallops - 7.1 oz
- Mayonnaise - 3.5 oz
- Honey - 1 tablespoon
- Wasabi - 0.1 oz
- Olive Oil - 1 fl oz
- Cilantro - 0.2 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Rice Vinegar for Sushi - 0 fl oz
- Sesame Oil - 1 fl oz
Step by Step guide
Step 1
Add rice vinegar, sesame oil, a bit of wasabi paste, and soy mayonnaise to the miso paste. Mix everything until smooth. Then add honey and mix again.
Step 2
Cut the eggplants in half and remove the stems. In a large skillet, heat a lot of olive oil. Place the eggplants skin side down and fry. Then place them on a paper towel to drain excess oil.
Step 3
Peel and chop the shrimp. Chop the scallops. Mix them together. Place the eggplants in a deep baking dish, and on each eggplant, add 2-3 tablespoons of shrimp and scallops. Put in a preheated oven at 392°F and lightly brown. Once the shrimp turn pink, remove the baking dish and top each eggplant with the sauce. Then return to the oven to brown. Before serving, sprinkle with torn cilantro.
