- Eggplants - 2 pieces
- Pesto - 2 tablespoons
- Pizza Mozzarella Cheese - 4.4 oz
- Beans in tomato sauce - 12.3 oz
- Breadcrumbs - 1.8 oz
- Grated Pecorino Pepato Cheese - 1.8 oz

Step 1
Preheat the oven to 392°F. Slice the eggplants thinly lengthwise. In a large skillet, heat olive oil and sauté the eggplants on both sides until golden brown.
Step 2
In a heatproof ceramic dish, layer three layers of eggplants, spreading each layer with red pesto, tomato sauce, and pieces of mozzarella.
Step 3
Mix the breadcrumbs and grated Parmesan. Sprinkle the mixture over the eggplants. Bake for 20-25 minutes until a brown crust forms.
