Ingredients
- Eggplants - 4 pieces
- Garlic - 2 cloves
- Soy Sauce - 3 fl oz
- Lemongrass - 2 stalks
- Salt - to taste
- Vegetable Oil - 2 tablespoons
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Remove the tough leaves from the lemongrass. Peel the garlic and ginger. Chop everything. Slice the eggplants into 2 cm thick rounds.
Step 2
In a non-stick skillet, heat the vegetable oil and add the mixture: lemongrass, ginger, and garlic. Lightly salt and generously pepper. Stir for 2 minutes, then add the eggplants and stir for another 5 minutes. Pour in the soy sauce and heat for 8–10 minutes, stirring occasionally. Serve hot or warm.
