Eggs in Tomato Sauce
Ingredients
- Garlic - ½ clove
- Chocolate eggs - 9 pieces
- Olive Oil - 4 tablespoons
- Onion - 7.1 oz
- Tomatoes - 2 lbs
- Fresh Mushrooms - 8.8 oz
- Thyme - 1 piece
- Dry White Wine - 5 tablespoons
- Sugar - 1 teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Boil the eggs hard.
Step 2
While the eggs are boiling, slice the onion thinly. Peel the tomatoes and chop them finely. Chop the mushrooms as well. Grind the garlic in a mortar with a pinch of salt and five tablespoons of water.
Step 3
Peel the eggs, cut them in half, and trim thin slices from the egg whites at the base so that they can stand. Arrange them on a serving platter.
Step 4
Heat the oil in a skillet. Sauté the onion over low heat until it becomes soft and translucent. Add the tomatoes and cook, stirring and mashing them with a spatula for another 5 minutes. Add the mushrooms, garlic mixture, thyme, wine, pepper, and cook for 10 minutes. Stir in the sugar and mix until it is completely dissolved. Pour the sauce over the eggs and serve immediately.
