Eggs with Shrimp
Ingredients
- Chicken Egg - 9 pieces
- Shrimp - 12.3 oz
- Safflower Oil - 3 tablespoons
- Onion - 1 head
- Wheat Flour - 3 tablespoons
- Dry White Wine - 5 tablespoons
- Salt - to taste
Step by Step guide
Step 1
In a large pot, bring salted water to a boil and cook the unpeeled shrimp for 2-3 minutes. Drain into a colander, reserving 450 ml of the broth. Remove the heads and peel the shrimp, then cut the tails into 2-3 pieces.
Step 2
Boil the eggs hard, then carefully extract the yolks.
Step 3
Heat the oil in a pan, add finely chopped onion, and cook over low heat, stirring, for 8 minutes until browned. Stir in the flour and cook, stirring constantly, for another 2 minutes. Then slowly pour in the wine followed by the shrimp broth. Cook, stirring, for 5 minutes. Transfer to a bowl, season with salt to taste, and do not let it cool.
Step 4
Mix 7 yolks with the shrimp and 2-3 tablespoons of the sauce. Cut thin slices off the base of the egg whites so they can stand. Use a teaspoon to fill them with the mixture. Arrange in a single layer in a baking dish and pour the remaining sauce over them. Bake for 5 minutes at 356°F.
Step 5
Sprinkle with crumbled yolks passed through a sieve and serve immediately.
