Ingredients
- Green Banana Syrup - 0.5 oz
- Caramel Syrup - 0 fl oz
- Basil Mustard Sauce - 0.4 oz
- Meyer Lemon Juice - 0 fl oz
- Tonic - 3 fl oz
Step by Step guide
Step 1
To prepare the banana syrup, take a ripe banana (until the skin is black), peel it, slice it into rings, and cook in a saucepan with a small amount of water until it becomes a homogeneous syrup.
Step 2
Take 30 g of fresh basil, blanch it in boiling water, and cool it down. Mix boiling water and sugar in a 2:1 ratio. Place the basil and sugar syrup in a blender and blend, then strain.
Step 3
Crush cocoa beans, pour sugar syrup over them, and place in a sous vide for 3 hours. Afterward, filter it. For homemade tonic - dice pineapple, add sugar, lime leaves, green cardamom, and cassia bark - all in sous vide for 2 hours. Strain and add to the resulting syrup, fresh lemon juice, soda, and carbonate.
Step 4
Mix all the ingredients in one glass. Serve in a highball glass, over ice cubes, topped with crushed ice, and garnish with sweet cocoa nibs and a homemade pineapple candy.
