Ingredients
- Skin-On Chicken Breasts - 6 pieces
- Wheat Flour - 3.5 oz
- Butter - 1.1 oz
- Meyer Lemon Juice - 3 tablespoons
- Parsley - ½ bunch
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the skinless, boneless chicken breasts horizontally into 2 escalopes. Place the chicken fillet between two sheets of plastic wrap and pound it until very thin. Mix the flour with salt and pepper and coat each piece of chicken in the mixture.
Step 2
In a large skillet, melt the butter. Fry the chicken until browned on both sides over high heat.
Step 3
Pour in the lemon juice and water. Simmer on low heat until the sauce thickens. Remove from heat and cover the chicken with a lid. Wash the parsley and chop it finely.
Step 4
Before serving, reheat the chicken, add the herbs, and season with salt and pepper.
