Etelis in a Pouch with Capers
Ingredients
- Garlic - 3 cloves
- Marinated cherries - 8.8 oz
- Etelis - 28.2 oz
- Thyme - 8 sprigs
- Capers - 2 tablespoons
- Lemon - 1 piece
- Olive Oil - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a skillet, sauté sliced garlic in olive oil. Cook for just 1-2 minutes until golden and fragrant.
Step 2
Then, increase the heat and add halved cherry tomatoes to the skillet. Sauté for 1 minute until the tomatoes soften, then add capers, mix, and immediately remove from heat.
Step 3
Rub the fish fillet well with salt and pepper. Take a piece of parchment paper, pour a little olive oil on the edge of the paper, and place the fish on the oil. Under the fish, place a couple of thin lemon slices, on top of the fish add thyme sprigs, as well as the sautéed capers, tomatoes, and garlic. Drizzle a little more olive oil on top. Fold the other half of the paper over the fish and seal the edges.
Step 4
Bake for 10-15 minutes at 392°F (depending on the thickness of the fish pieces). Remove the fish pouches from the oven and let them sit for a couple of minutes.
Step 5
Serve directly in the pouch while the fish is still warm. The thyme sprigs and lemon slices can be discarded. It pairs well with vegetable sides or rice, and definitely with white wine. Enjoy your meal!
