Ingredients
- Green Butter - 1 bunch
- Orange Bell Peppers - 2 pieces
- Mango - 1 piece
- Skin-On Chicken Breasts - 2 pieces
- Walnuts - 1 tablespoon
- Parsley - 1 bunch
- Meyer Lemon Juice - 2 tablespoons
- Salt - 0.3 teaspoons
- Ground clove - ¼ teaspoons
- Olive Oil - 1 tablespoon
- Red Curry Powder - 0.3 teaspoons
- Ground coriander - ½ teaspoons
- Grated Ginger Root - 1 teaspoon
- Garlic - 1 clove
- Onion - 1 head
Step by Step guide
Step 1
Chop the marinade ingredients (1 tablespoon of olive oil, 1/3 teaspoon of curry powder, 0.5 teaspoon of ground coriander, 1 teaspoon of grated ginger, 1 clove of garlic, 1 small onion) using a blender.
Step 2
Rub the resulting paste onto the chicken breasts and refrigerate for 2 hours.
Step 3
Then wrap the breasts in foil and bake in the oven for 30 minutes.
Step 4
Combine all the dressing ingredients (1 bunch of parsley, 4 tablespoons of olive oil, 2 tablespoons of lemon juice, 1/3 teaspoon of salt, 1/4 teaspoon of ground allspice).
Step 5
Place lettuce leaves in serving bowls and drizzle with some dressing.
Step 6
Peel the mango and cut it into cubes, slice the bell pepper into strips.
Step 7
Cool the baked chicken breasts and slice them.
Step 8
Combine the mango, chicken, and pepper and mix.
Step 9
Serve in bowls, drizzle with the remaining dressing, and sprinkle with walnuts.
