- Bacon - 2.6 oz
- Onion - 1 piece
- Garlic - 1 clove
- Carrot - 1 piece
- Celery stalk - 1 piece
- Olive Oil - 3 tablespoons
- Parsley - 1 piece
- Pork Mince - 14.1 oz
- Bay leaf - 1 piece
- Red Grape Juice - 8 fl oz
- Baking Tomatoes - 14.1 oz
- Salt - a pinch
- Ground Black Pepper - a pinch
- Ground Nutmeg - a pinch
- Green Tagliatelle Pasta - 14.1 oz
- Grated Pecorino Pepato Cheese - 1.8 oz
- Chopped Sage Leaves - 1 tablespoon
- Chicken Broth - 1 qt
Step by Step guide
Step 1
For the sauce, dice the bacon, onion, carrot, celery, and mince the garlic.
Step 2
In a large pot, heat the olive oil. Sauté the bacon and vegetables. Add the minced meat and cook over low heat until browned, breaking it up as finely as possible.
Step 3
Slice the parsley and celery leaves, add the bay leaf.
Step 4
Pour in the wine and broth, add the canned tomatoes. Season the meat sauce with salt, pepper, and nutmeg, and simmer on the lowest heat for 3–4 hours.
Step 5
Cook the farfalle in salted water until slightly undercooked (al dente). Drain and mix with the Bolognese sauce. Sprinkle with cheese and fresh thyme.
