Description
Toasted breadcrumbs once served as a substitute for Parmesan for Italian peasants. This simple ingredient can enhance the flavor of both salads and pasta.
Ingredients
- Garlic - 3 cloves
- Fettuccine Pasta - 12.3 oz
- Mild Chili Spice - 2 pieces
- White bread - 1 piece
- Olive Oil - 1½ spoons
- Marinated cherries - 16 pieces
- Fresh basil leaves - 1.1 oz
- Salt - to taste
Step by Step guide
Step 1
Remove the crust from the bread and crumble it by hand or with a blender. It's best if the bread is a bit stale, as it will crumble more easily.
Step 2
Peel the garlic cloves, crush them with a knife, tear them into strands with your hands, and add them to a heated pan with olive oil. Also add the chili pepper — there's no need to chop it; just prick it all over with a fork so that the oil absorbs its heat.
Step 3
As soon as the garlic and chili become fragrant, add the breadcrumbs to the pan. There shouldn't be too much oil in the pan, otherwise, the breadcrumbs will get soggy. Toast the breadcrumbs until golden brown, stirring constantly with a spatula to prevent them from clumping together.
Step 4
Cook the farfalle until al dente. Drain the water, add a drizzle of olive oil, and before serving, sprinkle with crumbs and garnish with halved cherry tomatoes and basil leaves.
