Description
You can use penne instead of farfalle. You can also substitute Edam cheese with any other semi-hard cheese of your choice. Instead of frying the squid, you can lightly stew it in white wine.
Ingredients
- Squid - 10.6 oz
- Green Tagliatelle Pasta - 8.8 oz
- Butter - 0.9 oz
- Milk - 7 fl oz
- Danish Blue Cheese - 3.5 oz
- Olive Oil - 1 teaspoon
- Herbes de Provence - to taste
- Salt - a pinch
- Edam Cheese - 0.7 oz
- Wheat Flour - 2 teaspoons
Step by Step guide
Step 1
Clean the squid from the membrane. Rinse and pat dry to remove excess moisture. Cut into rings. Set aside for a while.
Step 2
In a saucepan, melt the butter. Gradually add the sifted flour to the melted butter, stirring occasionally until a homogeneous mass forms.
Step 3
Pour the milk into the resulting mixture. Stir. Add the pre-broken Danish blue cheese into small cubes to the saucepan. Stir until a mixture with the consistency of thick yogurt is formed.
Step 4
Over medium heat, warm the spices in a pan, then pour in the teaspoon of olive oil. Allow the oil to heat up. Add the cut squid rings. Fry until a light white color appears, approximately 1.5 - 2 minutes.
Step 5
In a baking dish, place the dry farfalle at the bottom.
Step 6
Layer the fried squid on top of the dry farfalle.
Step 7
Pour the resulting sauce over the squid and farfalle. Let it sit for 7-10 minutes. Place the dish in an oven preheated to 392°F. Bake for 25-30 minutes.
Step 8
5 minutes before it’s done, sprinkle the dish with grated Edam cheese. Serve preferably with a white semi-dry wine.
