Ingredients
- Bay leaf - 1 piece
- Cider - 16 fl oz
- Coarse Salt - to taste
- Wheat Groats - 8 fl oz
- Apple Cider Vinegar - 2 tablespoons
- Olive Oil - 2 tablespoons
- Ground Black Pepper - to taste
- Celery root - 1 piece
- Apple - 2 pieces
- Red Onion - 2 heads
- Parsley - 2.5 oz
- Pitted olives - to taste
- Pecorino Cheese - 1.1 oz
Step by Step guide
Step 1
Combine the bay leaf, apple cider, and 480 ml of water in a medium saucepan, and add salt. Bring to a boil, reduce heat to medium, and add the farro. Cook until al dente (25–30 minutes); drain the water. Spread on a rimmed baking sheet and let cool.
Step 2
Mix the farro, vinegar, and oil in a large bowl; season with salt and pepper. Add the celery, apple, onion, parsley, olives, and Pecorino, toss, and adjust seasoning with salt and pepper.
