Fennel, arugula, and smoked trout salad with horseradish dressing

Ingredients

  • Sour Cream - 1½ tablespoons
  • Olive Oil - 3 teaspoons
  • Horseradish Leaves - to taste
  • Dill - 2 teaspoons
  • Arugula - 4.9 oz
  • Champagne Vinegar - 1¼ teaspoons
  • Fennel - 3.5 oz
  • Spanish onions - 2.8 oz
  • Cold-smoked trout - 3.5 oz

Step by Step guide

Step 1

In a bowl, mix the sour cream, half of the olive oil, horseradish, dill, and half of the vinegar. Season with salt and pepper.

Step 2

In a large bowl, combine the arugula, sliced fennel, and onion. Add the remaining oil and vinegar, season with salt and pepper, and mix well.

Step 3

Divide the salad between 2 plates and top with diced fish. Drizzle with the horseradish dressing and serve.
