  • Sugar - 1½ teaspoons
  • Meyer Lemon Juice - 2 tablespoons
  • Olive Oil - ¼ cup
  • Mustard Greens - ½ teaspoon
  • Salt - ½ teaspoon
  • Chopped Sage Leaves - 1 tablespoon
  • Shallot - 1 head

Step by Step guide

Step 1

In a blender, combine sugar, salt, lemon juice, mustard, mint, and chopped shallot. While blending, gradually add the olive oil.

Step 2

Using a mandoline, slice the large fennel bulb (or 2 medium ones) into thin strips and transfer to a bowl.

Step 3

Drizzle with the vinaigrette, toss, and refrigerate for 1 hour.
