Ingredients

  • Garlic - 10 cloves
  • Pork Neck - 4 lbs
  • Fresh Rose Hips - 1 sprig
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Olive Oil - 1 tablespoon
  • Salad Potatoes - 3 lbs
  • Lard - 3.5 oz

Step by Step guide

Step 1

The recipe is the same for any amount of meat from 1.5 to 3 kg.

Step 2

Preheat the oven to 374°F with a baking tray inside.

Take a piece of pork neck and carefully stuff it with garlic. P.S. Just a side note: in recent years, I find myself in a quiet stupor when I see factory packages labeled 'LARD' salted, smoked – it doesn't matter. The associative line leads me to thoughts of dismemberment. Well, never mind...

Step 4

Cut the salted lard into small pieces. This will serve as a bed for the pork and potatoes and create wonderful cracklings.

Step 5

Season the pork with salt, lightly pepper it, brush it with olive oil, insert a sprig of rosemary into it, and wrap it in foil.

Step 6

Place the lard and meat on the hot baking tray and leave it in the oven for 1 hour.

Step 7

While the meat is cooking, peel, wash, and cut the small potatoes in half.

Step 8

After an hour, take the baking tray out, remove the foil, drizzle the meat with melted fat and juice, set the cracklings aside on a separate plate, and add the potatoes.

Step 9

Cook the meat with the potatoes for another hour. Don't forget to drizzle the potatoes with fat and juice. I do this about 3-4 times during the hour.

Step 10

To make the time pass more quickly, I suggest having a drink and snacking on the ready cracklings.
