Fettuccine "Red Hot Chili Chicken"
Ingredients
- Chicken fillet - 3.5 oz
- Fettuccine Pasta - 3.5 oz
- Onion - 3.5 oz
- Pitted olives - 1.8 oz
- Chili jam - to taste
- Herbs - 1 bunch
- Crushed Tomatoes in Their Own Juice - 3.5 oz
- Orange juice concentrate - 0 fl oz
- Basil - 1 bunch
- Spices - to taste
- Grated Pecorino Pepato Cheese - 3.5 oz
- Low-fat lactose-free milk - 1 qt
Step by Step guide
Step 1
Marinate the chicken in kefir for 2 hours.
Step 2
Prepare the "Sole Rosso" sauce: chop the plum tomatoes in their own juice, mix them with freshly squeezed orange juice, add chopped basil and spices to taste.
Step 3
Cook the fettuccine until al dente. (this means removing it from the heat one minute earlier than indicated in the cooking method) Drain the water.
Step 4
Cut the chicken into pieces and sauté in olive oil over high heat for a couple of minutes.
Step 5
Add finely chopped onion, the "Sole Rosso" sauce, and olives, and leave in the pan for one minute, stirring constantly.
Step 6
Reduce the heat, add chili sauce and the pre-cooked al dente fettuccine. Sauté for 2-3 minutes, stirring constantly.
Step 7
Serve, garnished with Parmesan cheese and chopped herbs.
