Ingredients

  • Fettuccine Pasta - 3.2 oz
  • Pickled Chanterelles - 3.5 oz
  • Spanish onions - 1.1 oz
  • Garlic - 1 clove
  • Tarragon - 2 stems
  • Apple Wine - 2 fl oz
  • Butter - 1.1 oz
  • Olive Oil - 1 fl oz
  • Grated Pecorino Pepato Cheese - 1.6 oz
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Sauté the mushrooms with garlic and onion in olive oil, add the wine and let it evaporate (about eighty percent).

Step 2

Add chopped tarragon, butter, salt, and pepper.

Step 3

Cook the pasta in boiling salted water for 30 seconds, then transfer it to the mushroom sauce and mix.

Step 4

Sprinkle the pasta on the plate with grated cheese.
