- Pickled Chanterelles - 3.5 oz
- Spanish onions - 1.1 oz
- Garlic - 1 clove
- Tarragon - 2 stems
- Apple Wine - 2 fl oz
- Butter - 1.1 oz
- Olive Oil - 1 fl oz
- Grated Pecorino Pepato Cheese - 1.6 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Sauté the mushrooms with garlic and onion in olive oil, add the wine and let it evaporate (about eighty percent).
Step 2
Add chopped tarragon, butter, salt, and pepper.
Step 3
Cook the pasta in boiling salted water for 30 seconds, then transfer it to the mushroom sauce and mix.
