Ingredients
- Fettuccine Pasta - 14.1 oz
- Scallions - 1.2 oz
- Olive Oil - 2 tablespoons
- Butter - 2 tablespoons
- Crab Meat - 8.8 oz
- Frozen green bean pods - 2.5 oz
- Meyer Lemon Juice - 2 teaspoons
- Ground ancho chili pepper - 1 piece
- Grated Pecorino Pepato Cheese - 2 tablespoons
- Chopped Sage Leaves - 0.9 oz
Step by Step guide
Step 1
In a large pot, bring water to a boil, add salt (2 teaspoons of salt per 6 liters of water), and add the pasta. Cook for 2 minutes less than the package instructions. Drain the cooked pasta in a colander. Reserve 1 cup of the pasta cooking water.
Step 2
While the pasta is cooking, melt 1 tablespoon of butter in a heavy-bottomed skillet, add 1 tablespoon of olive oil, toss in the green onions, and sauté over medium heat for 2 minutes.
Step 3
Add half a cup of the pasta cooking water to the onions, along with the green peas, salt (1/4 teaspoon), black pepper (1/8 teaspoon), and simmer for 1 minute. Then add the crab meat and continue cooking for 2 minutes.
Step 4
Add the cooked pasta to the skillet with the vegetables and crab. Stir in the finely chopped fresh chili pepper, lemon juice, parmesan, and mix thoroughly with the remaining butter and olive oil. If the pasta seems too dry, add some of the reserved pasta cooking water.
Step 5
Once the pasta is fully coated in the sauce, remove the skillet from heat, mix in the parsley, and serve immediately.
