Fettuccine with Creamy Fish Sauce
Ingredients
- Red drum fish - 10.6 oz
- Tomatoes - 2 pieces
- 10% cream - 8 fl oz
- Onion - 1 piece
- Garlic - 1 clove
- Parmesan Cheese - 5.3 oz
- Olive Oil - 3 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Fettuccine Pasta - 14.1 oz
- Thyme - 1 tablespoon
Step by Step guide
Step 1
Rinse the fish and cut it into large cubes.
Step 2
Blanch the tomatoes in boiling water, then transfer them to cold water and peel off the skin.
Step 3
Cut the tomatoes into quarters and remove the seeds and liquid.
Step 4
Dice the flesh of the tomatoes.
Step 5
Peel and finely chop the onion.
Step 6
Grate the garlic on a fine grater.
Step 7
Mix the fish with salt, pepper, and thyme.
Step 8
In a large skillet, heat the oil and add the onion.
Step 9
Cook the onion for about 1 minute, then add the garlic, fish, and tomatoes.

Mix the cream with the grated Parmesan.
Step 11
Cook the fish with the vegetables for about 5–8 minutes, then pour in the cream.
Step 12
Simmer the sauce on low heat for another 5 minutes.
Step 13
Cook the pasta in salted water until almost done. Add it to the skillet.
Step 14
Toss the pasta with the sauce and turn off the heat.
Step 15
Before serving, sprinkle the pasta with chopped herbs and cheese.
