Fettuccine with Smoked Salmon in Cream and Dill Sauce
Ingredients
- Garlic - 2 cloves
- Milk - 1⅕ cups
- Nutmeg - a pinch
- Salt - 1⅕ teaspoons
- Smoked Salmon Flavored Croutons - 3.5 oz
- Onion - 1 head
- Chopped Green Onions - 1.30 cups
- Butter - 4 tablespoons
- Fettuccine Pasta - 12.3 oz
- Wheat Flour - 1⅖ cups
- 10% cream - 1 cup
- Dry White Wine - 1.30 cups
- White Pepper (whole) - 1⅖ teaspoons
- Grated Pecorino Pepato Cheese - 5.3 oz
Step by Step guide
Step 1
Place a pot of water on the stove.
Step 2
While the water is boiling, chop the onion and fresh dill. Cut the salmon into small pieces.
Step 3
In the pot, melt 2 tablespoons of butter. Add the onion and garlic to the pot and cook, stirring, until the onion is soft, about 3 minutes, but do not let it turn golden.
Step 4
Add the fettuccine to the boiling water and cook until done.
Step 5
While the fettuccine is cooking, add another 2 tablespoons of butter to the pot. Add the flour and stir until the flour is dissolved, about 1 minute. Then add the cream, milk, wine, dill, nutmeg, salt, and pepper, and keep on low heat until a homogeneous mass forms. Continue to simmer, stirring, until the sauce thickens—about another 4 minutes.
Step 6
Mix the sauce with the salmon and Parmesan.
Step 7
Drain the fettuccine and serve, drizzling the resulting sauce on top.
