Ingredients
- Fettuccine Pasta - 5.3 oz
- Courgette - 1 piece
- Shallot - 1 piece
- Citrus Zest Mix - a pinch
- Cream - 1 fl oz
- Olive Oil - 2 spoons
- Fresh Mint - to taste
- Salt - to taste
- Ground Black Pepper - to taste
- Mild Chili Spice - to taste
Step by Step guide
Step 1
Chop the shallots into small cubes and sauté them over low heat with olive oil.
Step 2
Slice the zucchini into thin rounds, add them to the onions, increase the heat slightly, and sauté for another 2 minutes, then season with salt and pepper.
Step 3
Add grated lemon zest, chili pepper (optional), and cream, allowing it to reduce by half. Then, add the partially cooked fettuccine along with 3-4 tablespoons of pasta cooking water.
Step 4
Keep it on low heat for another 2 minutes, stirring constantly.
Step 5
Serve the pasta on plates and garnish with fresh mint leaves.
