Description
If you don't have artichokes, substitute with mushrooms; if you don't have green beans, add eggplants or carrots. Everything is to your taste and imagination! The secret to making delicious fideuà is in the good sauté. Sauté the vegetables over very low heat to release all their juices. If you are a fan of spicy and tangy dishes, add 1 small chili pepper to the vegetables.
Ingredients
- Vermicelli - 10.6 oz
- Artichokes in Oil - 3 pieces
- Spanish onions - 1 head
- Canned Mushroom Soup - 3.5 oz
- Chinese green beans - 5.3 oz
- Orange Bell Peppers - 2 pieces
- Garlic - 4 cloves
- Passata Tomato Sauce - 3 tablespoons
- Olive Oil - 4 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Place a frying pan on the heat. Add 4 tablespoons of olive oil. Peel and finely chop the onion and garlic. Add them to the pan. Stir for 3 minutes and then add the tomato sauce (or tomato paste or peeled fresh tomatoes).
Step 2
Clean the artichokes. Add them to the sauté. Do the same with the other vegetables: string beans, peas, and peppers (cut the peppers into cubes or half-rings). Simmer over low heat for 5 minutes.
Step 3
Put a shallow pot with a wide bottom (you can use a large frying pan) on the heat. Add 2 large glasses of water and salt. When the water boils, add 1 glass of vermicelli. When the vermicelli has boiled for 8 minutes, add the sautéed vegetables with the sauce. Mix well. Turn off the heat and let it sit for about 10 minutes, covered.
