Ingredients
- Fig - 6 pieces
- Avocado - 2 pieces
- Oranges - 2 pieces
- Homemade Cheese - 10.6 oz
- Pistachios - 1.8 oz
- Rice Vinegar for Sushi - 1 fl oz
- Olive Oil - 2 fl oz
- Salt - to taste
- Sugar - to taste
- Ground Black Pepper - to taste
- Arugula - 3.2 oz
Step by Step guide
Step 1
Peel the orange, removing the skin and white membranes with a knife. Then, cut out the segments, avoiding the membranes. Squeeze the juice from the remaining part with the membranes into a bowl.
Step 2
Add rice vinegar, sugar, and salt to the orange juice. Whisk with a balloon whisk while gradually pouring in the olive oil.
Step 3
Cut the figs into large wedges, peel and pit the avocado, then slice it into half-moons. Tear the cheese into large pieces by hand.
Step 4
Mix the arugula with half of the dressing. Arrange the arugula on a plate, carefully place the orange segments, figs, and cheese pieces on top, drizzle with the remaining dressing, and garnish with toasted pine nuts.
