Description
A good option for cream cheese in this salad is Almette. This brand has versions with herbs, so there's no need to add parsley.
Ingredients
- Fig - 12 pieces
- Honey - 2 spoons
- Lemon - 1 piece
- Salted anchovies in oil - 24 pieces
- Olive Oil - 1 fl oz
- Semi-soft cream cheese - 7.1 oz
- Parsley - 0.7 oz
- Arugula - 3.5 oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Rinse the anchovies in water to remove excess salt.
Step 2
Make a crosswise cut on each fig and gently open up the cut to reveal the fruit's insides.
Step 3
Whisk the honey together with the juice of one lemon, ground pepper, and olive oil. Toss the arugula with half of the dressing and arrange the greens on the plates in a nest-like shape that seems uninhabitable, yet is very tempting.
Step 4
In the nest, place three cross-sliced figs, and inside each one, put two anchovy fillets. Next to it, arrange about fifty grams of cottage cheese mixed with finely chopped parsley. Drizzle this beautiful combination with the remaining honey sauce, being careful not to overdo it. After all, the honey sauce is quite strong in flavor and aroma, so it should be used sparingly.
Step 5
Enjoy the salad by cutting a piece of fig, spreading cheese on it, adding a small piece of anchovy fillet, and topping it with a leaf of arugula.
