Firecracker Chicken
Ingredients
- Chicken Thighs - 24.7 oz
- Garlic - 2 cloves
- Chili Flakes - 1 tablespoon
- Soy Sauce - 1 fl oz
- Rice Vinegar for Sushi - 1 fl oz
- Sriracha - 2 fl oz
- Brown Sugar - 2.5 oz
- Sesame bun - to taste
- Scallions - to taste
- Pak choi salad - to taste
- Vegetable Oil - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Cut the chicken across the grain into strips about 0.5 mm thick.
Step 3
Peel and chop the garlic. Slice the green onion stalks into thin strips lengthwise.
Step 4
Heat a skillet over high heat with oil. Quickly sauté the chicken until it turns white on the outside, but remains slightly undercooked on the inside.
Step 5
Add the garlic and chili flakes, stir, and continue frying while stirring until the garlic turns golden, about 30 seconds.
Step 6
Add soy sauce, vinegar, sriracha, sugar, and a little water. Stir well, reduce the heat, and cook while continuing to stir until the sugar is completely dissolved and the chicken slices are coated in a layer of caramel.
Step 7
Remove the skillet from the heat and let the sauce thicken for 2–3 minutes. Stir again and sprinkle with sesame seeds so that the slices are evenly coated.
Step 8
Blanch the greens for the garnish in boiling salted water, then transfer them to cold water and drain.
Step 9
Arrange the chicken on plates. Place the side dish alongside.
Step 10
Serve the firecracker chicken with rice, garnished with chopped green onions and sprinkled with toasted sesame seeds.
