- Wheat Flour - 10.6 oz
- Cod - 26.5 oz
- Starch film - 3 oz
- Baking Powder - 0.9 oz
- Light Beer - 8 fl oz
- Sparkling water - 4 fl oz
- Vegetable Oil - 13 fl oz
- Mayonnaise - 8.8 oz
- Capers - 2.6 oz
- Gherkins - 3.5 oz
- Tarragon - 0.2 oz
- Parsley - 0.3 oz
- Meyer Lemon Juice - 1 tablespoon
- Citrus Zest Mix - 0.4 oz
- Ocean salt - to taste
- Lemon - 5 pieces
Step by Step guide
Step 1
For the tartar sauce, finely chop the gherkins into small cubes, and also finely chop the parsley, tarragon, and capers. Mix everything together, then add lemon juice, homemade mayonnaise, and grated lemon zest. Season with salt to taste and mix well.
Step 2
In a large bowl, combine 200 grams of flour, starch, and baking powder. Add salt. Then, gradually pour in the beer while stirring with a spatula, and continue to mix as you slowly add the sparkling water. Blend everything until you achieve a smooth consistency.
Step 3
Cut the cod fillet into long strips, 4–5 cm wide. First, coat each piece of fish in flour, then dip it in the batter. Fry in hot oil at 320°F until golden brown.
Step 4
Serve the cod with a wedge of lemon and tartar sauce.
