This dish is very simple to prepare; however, to ensure success, you need to use firm, meaty fish.

  • Ocean salt - 105.8 oz
  • Halibut - 1 piece

Step by Step guide

Step 1

Leave the skin on the gutted fish; otherwise, the salt will penetrate deep into the flesh and overpower the flavor. Use the blunt side of a knife blade to scale the fish, then rinse it under cold water and pat it dry with a towel.

Step 2

Preheat the oven to 392°F. Take a deep ceramic baking dish large enough to fit the fish whole and cover the bottom with a thick layer of salt. Place the fish on top and cover it with another layer of salt so that the fish is completely hidden. Spray the salt with water to create a dough-like consistency.

Step 3

Bake for about 40 minutes, depending on the size of the fish. Then remove the dish from the oven, cover the fish with a towel or thick napkin, and break the salt crust using a hammer or, for example, a rolling pin.

Step 4

Carefully transfer the fish to a serving platter without breaking it and serve. It can be seasoned with mayonnaise or various sauces based on it.
