Fish Meatballs with Nut Sauce
Ingredients
- Cod - 17.6 oz
- Onion - ½ head
- Farm fresh eggs - 2 pieces
- Fish Oil - 1 cup
- Breadcrumbs - 1 cup
- Ground Almonds - 3 tablespoons
- Lemon - 2 pieces
- Wheat Flour - 7.1 oz
- Parsley - 1 bunch
- Olive Oil - 2 tablespoons
- Dried Rosemary - 1 teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Remove bones from the fish.
Step 2
In a food processor, blend the fish, eggs, chopped onion, breadcrumbs, olive oil, oregano, and half of the parsley until smooth. Season with salt and pepper.
Step 3
Roll into balls the size of apricots, first coat in flour, then in lemon juice, and again in flour. Fry in a deep skillet until golden brown.
Step 4
Pour in the stock, add the remaining parsley, cover, and cook for 10 minutes, then add the almonds, gently stir, and simmer uncovered for 5 minutes until thickened.
Step 5
Serve hot as a main dish or cold as an appetizer.
