Ingredients
- Salad Potatoes - 3 lbs
- Milk - 2½ cups
- Butter - 3.5 oz
- Nutmeg - to taste
- White fish - 14.1 oz
- Chicken Broth - 0.7 cups
- Green Peas - 1½ cups
- Onion - 1 head
- Garlic - 3 cloves
- Bay leaf - 1 piece
- Salt - 1 teaspoon
- Lemon - 1 piece
- Carrot - 1 piece
- Parsley - to taste
- Grated Pecorino Pepato Cheese - 5.3 oz
- Wheat Flour - 5 tablespoons
- White Pepper (whole) - to taste
Step by Step guide
Step 1
Peel the potatoes, boil them, then mash with about 2/3 cup of milk, add a bit of butter, salt, pepper, and grated nutmeg.
Step 2
Take a package of frozen fish (you can also use fresh). This can be cod, pangasius, or haddock. Place the fish in a pot, pour in approximately 1½ cups of milk and broth—vegetable or fish. For flavor, cut the onion in half and stud one half with a clove, as shown in the photo. Place the onion in the pot with the fish, clove side down, add half a teaspoon of salt and the bay leaf. Bring to a boil and simmer on low heat for 8–10 minutes, until the fish starts to flake slightly.
Step 3
At the same time, grate a large carrot, and chop the remaining half of the onion into cubes. Take 1½ cups of frozen peas or one large can of canned peas. Finely chop a large handful of parsley (about 4 tablespoons).
Step 4
Transfer the cooked fish to a plate, and we will make the sauce from the remaining liquid in the pot. First, melt 80 grams of butter, add 5 tablespoons of flour and, stirring, cook this mixture over low heat until smooth. Then gradually pour in the strained liquid left after cooking the fish. Add half a teaspoon of salt, white pepper, and cook for another 2 minutes. Optionally, you can add a bit of white wine to the sauce.
Step 5
Now for the vegetables. Sauté the onion with the carrot until they become soft (about 5 minutes), add the green peas, and cook for a few more minutes. During this time, grate and add the zest of half a lemon and lemon juice. This makes the flavor of the fish pie amazing. Add the parsley and simmer for another couple of minutes.
Step 6
Transfer the vegetable mixture to a baking dish, add the fish, mix thoroughly, and carefully pour the white sauce over it. Top with mashed potatoes using a fork, smooth it out, and sprinkle with grated cheese (such as Cheddar or Gouda).
Step 7
Bake in the oven at 175°C (350°F) for about 35–40 minutes, until the cheese is golden brown.
