Ingredients
- Blue Ling Fillet - 28.2 oz
- Milk - 13 fl oz
- Onion - 1 head
- Butter - 1.8 oz
- Wheat Flour - 2 tablespoons
- Ground clove - 2 pieces
- Nutmeg - a pinch
- Chopped Sage Leaves - 2 tablespoons
- Pea shoots - 5.5 oz
- Salad Potatoes - 26.5 oz
- Cheshire Cheese - 3 tablespoons
Step by Step guide
Step 1
Place the fish in a skillet and pour in the milk, reserving 2 tablespoons. Add finely chopped onion and cloves, bring to a boil. Reduce heat and cook for 5 minutes, until the fish is fully cooked.
Step 2
Preheat the oven to 356°F. Transfer the fish to a plate and let it cool. Break it into small pieces. Save the milk and onion from the skillet.
Step 3
Melt half of the butter in a saucepan, add the flour and cook, stirring, for 1 minute. Remove from heat and add the milk from the fish, mixing well. Return to heat and cook until the sauce comes to a boil and thickens slightly. Then cook for another minute. Let cool, then add nutmeg, parsley, and peas. Season with salt. Transfer the fish to a baking dish and pour the sauce over it.
Step 4
Boil the quartered potatoes in salted boiling water. Drain and add 2 tablespoons of hot milk and the remaining butter. Mash and add grated cheddar.
Step 5
Spread the potato over the fish and smooth it out. Bake in the oven for 30 minutes.
