Fitness Salad with Mussels
Ingredients
- Frozen White Mushrooms - 2.5 oz
- Broccoli - 3.5 oz
- Napa Cabbage - 1.8 oz
- Russian Cheese - 1.8 oz
- Olives stuffed with lemon - 2.1 oz
- Olive Oil - 2 tablespoons
- Garlic - 1 clove
- Salt - to taste
- Ground Black Pepper - to taste
- Meyer Lemon Juice - to taste
Step by Step guide
Step 1
Finely chop the garlic, sauté it in olive oil, and remove it from the pan.
Step 2
Place the frozen mussels in the pan and sauté in the garlic oil for 2–3 minutes.
Step 3
When the water evaporates, add salt, pepper, and sauté a bit more.
Step 4
Chop the Napa cabbage, cheese, and olives.
Step 5
Boil the broccoli in salted water for about 7 minutes. Drain the broccoli and place it in a bowl of cold water and ice for 2 minutes.
Step 6
In a bowl, mix the mussels, cheese, garlic, Napa cabbage, and olives. Add a bit of olive oil and lemon juice. Season with salt.
Step 7
Cut the large broccoli florets and arrange them around the edge of the plate. Place the salad in the center of the dish.
Step 8
Serve with an omelet or fried eggs.
