Ingredients
- Veal - 2 lbs
- Onion - 2 pieces
- Garlic - 0.1 oz
- Celery salt - 3.5 oz
- Parsley - ½ piece
- Rye Bread - 3 pieces
- Dark Ale - 11 fl oz
- Vegetable Oil - 3 tablespoons
- Sugar - 1 tablespoon
- Green peppercorns - to taste
- Bay leaf - 2 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Dijon Mustard - 3 tablespoons
Step by Step guide
Step 1
Cut the meat into large pieces. In a pot, heat 1 tablespoon of oil, add the meat, and sauté over high heat for 8–10 minutes until golden brown.
Step 2
Peel the celery and parsley roots and cut them into fine strips.
Step 3
Pour the beer into the pot with the meat, add the chopped roots, bay leaves, and peppercorns, cover with a lid, and simmer for 30 minutes on low heat.
Step 4
Peel the onion, dice it, and sauté separately in the remaining oil until golden.
Step 5
Trim the crusts off the bread, spread it with mustard, and add it to the meat along with the onions. Sprinkle with sugar, season with salt and pepper, and simmer for another 10 minutes.
