Ingredients
- Flounder - 14.1 oz
- Tomatoes - 2 pieces
- Italian chopped parsley - 0.7 oz
- Capers - 2 tablespoons
- Olive Oil - 2 tablespoons
- Citrus Zest Mix - 1 teaspoon
- Meyer Lemon Juice - 1 teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Wash the tomatoes, cut them in half, scoop out the seeds with a teaspoon, and chop them into small cubes. Place in a bowl.
Step 2
Add finely chopped herbs and capers, lemon zest, and olive oil to the bowl with the tomatoes. Mix everything together.
Step 3
Preheat the oven to 392°F.
Step 4
Place the fish fillet in a baking dish greased with olive oil, drizzle with lemon juice, and season with salt and pepper to taste. Spread the tomato mixture over the surface of the fillet.
Step 5
Bake on the middle rack for 15–20 minutes, depending on the thickness of the fillet.
