Ingredients
- Flounder - 4 pieces
- Fresh basil leaves - 26.5 oz
- Celery stalk - 1 piece
- Carrot - 1 piece
- Leek - ½ piece
- Ground Black Pepper - to taste
- Salt - to taste
- Butter - 5 tablespoons
- Dry White Wine - 7 fl oz
- Fish Oil - 7 fl oz
- Sour Cream - 3.5 oz
- Wheat Flour - 1 tablespoon
- Chopped Sage Leaves - 1 tablespoon
- Crab Meat - 4.2 oz
Step by Step guide
Step 1
Serve the fillet on a bed of spinach, drizzled with sauce.
Step 2
Blanch the spinach in salted water for 3 minutes, then drain in a colander. Preheat the oven to 392°F. Prepare the vegetables: wash and chop them. Blanch in salted water and drain in a colander.
Step 3
Season the fillet with salt and pepper, brush with 2 tablespoons of butter. Grease a baking tray with butter and place the fillet in it, then pour the wine and stock over the fish. Bake for 6 minutes.
Step 4
Lightly toast the flour in 2 tablespoons of butter until golden. Pour in the liquid left after baking the fish. Stirring, bring to a boil. Add the vegetables, parsley, and crab meat.
