Flounder in White Wine
Ingredients
- Flounder - 2 lbs
- Chopped Green Onions - 2 tablespoons
- Salt - to taste
- White Pepper (whole) - to taste
- Dry White Wine - 5 fl oz
- Fish Oil - 2 fl oz
- Meyer Lemon Juice - 0 fl oz
- Herbs - to taste
- Butter - 2 tablespoons
Step by Step guide
Step 1
Cut the fillet into portion-sized pieces from the skin side, season with salt and pepper.
Step 2
Grease a baking dish with vegetable oil and sprinkle 1 tablespoon of finely chopped onions on the bottom.
Step 3
Place the fish on top of the onions and sprinkle with the remaining onions.
Step 4
Pour the wine and stock over the fish.
Step 5
Cover with a lid or foil and place in a preheated oven at 356°F for 15–20 minutes.
Step 6
Remove the cooked fish and reduce the remaining stock by half.
Step 7
Add lemon juice, butter, and chopped herbs to the resulting sauce.
Step 8
Serve hot with the baked flounder.
