Ingredients
- Long-Grain Rice - ½ cup
- Cauliflower - 7.1 oz
- Vegetable Oil - 3 tablespoons
- Ground clove - 8 pieces
- Cardamom - to taste
- Cinnamon - 1 piece
- Green peppercorns - 1 teaspoon
- Toasted Cumin Seeds - 1 teaspoon
- Ground coriander - 1 teaspoon
- Onion - 1 head
- Spanish onions - to taste
- Bay leaf - to taste
Step by Step guide
Step 1
Rinse the rice, cover it with cold water, and let it soak for 30 minutes, then drain it, keeping the soaking water.
Step 2
Wash the cauliflower and divide it into small florets, blanch in boiling salted water for 2 minutes, and drain.
Step 3
In a heavy-bottomed saucepan, heat the vegetable oil, add the cloves, cardamom, bay leaf, cinnamon, pepper, cumin, and coriander, and sauté for 1 minute.
Step 4
Add the prepared onion to the saucepan and sauté for another 5 minutes.
Step 5
Add the rice to the saucepan, sauté for 2–3 minutes, pour in the soaking water, add the cauliflower, and season with salt.
Step 6
Bring to a boil, reduce the heat, and cook covered for 15 minutes, stirring the porridge 2–3 times during this time.
Step 7
Serve hot, garnished with bay leaves and rings of red onion.
