Description
The main secret of this pizza is simple — high-quality ingredients. The oven's job is to not ruin any of this: to make it as if the pizza were being baked in a stone oven with wood (and the Electrolux CombiSteam Pro has a special 'Pizza' mode to ensure everything turns out just right). Instead of the cheeses used in the recipe, you can choose others that you prefer. The important thing is that they have different flavors — for the interesting result that their harmonious ensemble will ultimately provide.

- Pizza Flour - 17.6 oz
- Pizza Mozzarella Cheese - 7.1 oz
- Goat cheese - 2.5 oz
- Emmental cheese - 2.5 oz
- Parmesan Cheese - 2.5 oz
- Olive Oil - 1 tablespoon
Step by Step guide
Step 1
Prepare all the ingredients. Preheat the oven to 482°F.
Step 2
Grease a small baking dish (about 20×30 cm) with a spoonful of olive oil, then add the dough and, using your fingers, stretch it from the center to the edges of the dish: you should aim for a lumpy sheet (a perfectly smooth surface is not ideal for homemade pizza).
Step 3
Let the dough rest in a warm place for fifteen to twenty minutes — for example, on the stove with the oven already turned on: the yeast will continue to work and make the dough airy.
Step 4
Place the baking dish with the dough in the oven for five minutes to let it dry out slightly.
Step 5
Cut the mozzarella (not the balls in brine, but the firm, dry cheese specifically for pizza), Emmental, and Gorgonzola (which can be substituted with any other blue cheese) into small cubes.
Step 6
Grate the Parmesan cheese.
Step 7
Place mozzarella and Emmental cheese on the lightly baked dough, sprinkle with Parmesan, and top with Gorgonzola.
Step 8
Return the pan to the oven for five minutes.
Step 9
Serve the pizza at the table, cut into portions.
