Ingredients
- Fresh basil leaves - 2.6 oz
- Four Rice Blend - 1 cup
- Frozen White Mushrooms - 8.8 oz
- Butter - 1 tablespoon
- Olive Oil - 1 tablespoon
- 10% cream - 3 fl oz
- Salt - to taste
- Lime Juice - 2 tablespoons
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In boiling salted water, add the rice and cook on low heat with the lid closed for 35 minutes.
Step 2
In a skillet, sauté the mussels in olive oil over medium heat for 5 minutes, seasoning with salt and pepper.
Step 3
In a saucepan, melt the butter, add finely chopped spinach, and sauté for 2 minutes. Drizzle the spinach with lime juice, add the cream, salt, pepper, and slightly reduce the cream over medium heat for 5 minutes until the sauce thickens.
Step 4
Serve the rice on a plate, top with mussels, and drizzle with spinach sauce.
