Ingredients
- Coriander essential oil - 2 tablespoons
- Toasted Cumin Seeds - 2 tablespoons
- Cardamom - 3 pieces
- White Pepper (whole) - 2 teaspoons
- Grated Ginger Root - 2 teaspoons
- Garlic - 4 cloves
- Spanish onions - 2 heads
- Red Long Chili Peppers - 4 pieces
- Cilantro - ¾ cup
- Olive Oil - 3 tablespoons
- Beef - 2 lbs
- Baking Tomatoes - 14.1 oz
- Passata Tomato Sauce - 2 tablespoons
- Campbell's Beef Broth - 10 fl oz
- Yogurt powder - 7.1 oz
- Basmati rice - to taste
Step by Step guide
Step 1
In a small skillet, place the cumin, coriander, cardamom, and pepper. Lightly toast over medium heat until fragrant. Cool. Transfer to a mortar and grind.
Step 2
In a blender, combine the ground spices, ginger, minced garlic, finely chopped onion, chopped chili, and half of the cilantro leaves. Blend until a paste forms.
Step 3
Heat 2 tablespoons of oil in a skillet and sauté the beef cut into small pieces over medium heat until browned. Transfer to a plate.
Step 4
In the same skillet, heat the remaining oil and add the curry paste from the blender. Cook, stirring constantly, for 3 minutes until the characteristic aroma develops.
Step 5
Return the beef to the skillet and add the tomatoes, tomato paste, and broth. Reduce the heat to low, mix well, cover, and simmer, stirring occasionally, for 1 hour.
Step 6
Remove the lid, stir, and simmer for another 30 minutes until the meat is tender and the sauce has reduced by half. Season with salt.
Step 7
Before serving, stir in the yogurt and the remaining cilantro. Serve with boiled rice.
