Description

Instead of thighs, you can use chicken drumsticks. It's better to use green olives.

Ingredients

  • Scallions - 1 bunch
  • Chicken Thighs - 3 lbs
  • Olive Oil - 1 tablespoon
  • Salad Potatoes - 17.6 oz
  • Garlic - 4 cloves
  • Dried Rosemary - 2 teaspoons
  • Chopped Sage Leaves - 1 tablespoon
  • Olives stuffed with lemon - 1 cup
  • Meyer Lemon Juice - 3 fl oz
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Marinate the chicken with salt and freshly ground black pepper.

Step 2

Pour oil into a large non-stick skillet and fry the chicken over high heat on both sides until golden brown, about 2 minutes.

Step 3

Mix the chopped onions, halved potatoes, minced garlic, rosemary, and oregano.

Step 4

Place everything in a baking dish.

Step 5

Top with chicken thighs, skin side up, and drizzle with lemon juice, then add the olives.

Step 6

Cover the dish with a lid or foil and bake in a preheated oven at 356°F for 1.5 hours.
