Fragrant Chicken with Roasted Red Peppers
Ingredients
- Marjoram - 2 teaspoons
- Garlic - 3 cloves
- Olive Oil - 1 tablespoon
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Chicken fillet - 4 pieces
- Champagne Vinegar - 1¼ tablespoons
- Orange Bell Peppers - 3 pieces
- Salad Potatoes - 12.3 oz
Step by Step guide
Step 1
Preheat the grill (you can use a barbecue).
Step 2
Mix 2 minced garlic cloves, marjoram, 2 teaspoons of olive oil, a bit of salt, and pepper. Brush the mixture onto the chicken breasts and let them sit at room temperature for 15 minutes to overnight (but in the refrigerator).
Step 3
Remove the seeds from the peppers and cut them lengthwise into 4 pieces. Transfer to a bowl and mix with the remaining minced garlic and 1 teaspoon of olive oil. Grill the peppers for about 15 minutes. Return to the bowl and drizzle with 1 tablespoon of vinegar. Toss to combine.
Step 4
Boil the potatoes in salted water until tender, about 15–20 minutes. Drain and return to the pot.
Step 5
Brown the chicken on the grill for about 10 minutes until cooked through.
Step 6
Meanwhile, slice the potatoes into rounds.
Step 7
On a serving plate, arrange the peppers and potatoes, placing the chicken alongside. Drizzle with the remaining vinegar and oil.
