Description

Ingredients

  • Tomatoes - 12.3 oz
  • Chicken Thighs - 2 lbs
  • Orange Bell Peppers - 8.8 oz
  • Mild Chili Spice - 0.4 oz
  • Garlic - 0.7 oz
  • Cilantro - 1.8 oz
  • Salt - to taste
  • Fresh basil leaves - 0.4 oz
  • Tamarind Paste - 1 teaspoon
  • Ground Black Pepper - to taste
  • Olive Oil - 3 tablespoons
  • Meyer Lemon Juice - 1 tablespoon
  • Balsamic Vinegar - 2 tablespoons

Step by Step guide

Step 1

Rinse the chicken thighs and pat dry. Remove the bones.

Step 2

Cut the meat into small strips.

Step 3

In a preheated skillet with olive oil, add the cut chicken meat.

Step 4

Sauté over high heat, stirring, for no more than 10 minutes, adding salt, black pepper, and curry paste at the end of cooking.

Step 5

For the vegetable part: wash the tomatoes and bell peppers (of various colors), remove the stems, cut the peppers into strips, and the tomatoes into wedges.

Step 6

Wash and dry all the herbs, garlic, and chili pepper, remove the seeds from the pepper, and chop finely.

Step 7

Combine the vegetables with the herbs, drizzle with lemon juice and balsamic vinegar, and season with salt.

Step 8

Place the hot meat on a warmed plate and top with the vegetable mixture.
