Ingredients
- Butter - 10 tablespoons
- Onion - 1 head
- Lean Beef - 24.7 oz
- Thyme - 1 stem
- Chicken Egg - 1 piece
- Salt - to taste
- Ground Black Pepper - to taste
- Wheat Flour - 1 cup
- Vegetable Oil - 1 tablespoon
- Shallot - 0 oz
- Red Grape Juice - 1 cup
- Parsley - 2.5 oz
Step by Step guide
Step 1
Melt 2 tablespoons of butter in a medium skillet over medium heat. Peel and finely chop the onion, and sauté for about 10 minutes until soft. Transfer the cooked onion to a large bowl and set aside. Once the onion cools slightly, add the ground beef, thyme leaves, lightly beaten egg, and 2 tablespoons of butter. Season with salt and pepper. Mix well. Divide the mixture into 6 equal parts and form 6 patties. Place the flour in a shallow bowl and coat the patties, shaking off the excess.
Step 2
Heat vegetable oil and 1 tablespoon of butter in a large skillet over high heat. Add the patties and fry on both sides until browned. Then transfer the cooked patties to a plate and cover with foil.
Step 3
Peel and finely chop the shallot. Drain the oil from the skillet and place it over medium heat. Melt 1 tablespoon of butter, and sauté the shallot for about 1 minute, stirring constantly.
Step 4
Increase the heat, pour in the wine, and cook, scraping up the browned bits from the bottom with a wooden spatula. When 3/4 of the liquid has evaporated, remove the skillet from the heat and add the remaining butter, 1 tablespoon at a time, stirring constantly. The sauce should be quite thick.
Step 5
Then add the chopped parsley leaves, and season with salt and pepper. Drizzle the prepared sauce over the patties and serve. Enjoy your meal!
