  • Onion - ½ head
  • Olive Oil - 1 teaspoon
  • Mixed Ground Peppers - ½ teaspoon
  • Ground Black Pepper - ½ teaspoon
  • Mayonnaise - 4 tablespoons
  • Marinated cherries - 10 pieces
  • Pizza Mozzarella Cheese - 2.5 oz
  • Grated Pecorino Pepato Cheese - 10 tablespoons
  • Ocean salt - to taste

Cover the meat with plastic wrap or a bag in two layers and pound it with a mallet on both sides.
