Description

- Poultry - 1 piece
- Bouquet Garni - 1 bunch
- Butter - 1.8 oz
- Garlic - 40 cloves
- Dry White Wine - 3 fl oz
- Olive Oil - 2 spoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Place the bouquet garni inside the chicken. Spread butter over the skin and season to taste. Place the chicken in a baking dish along with unpeeled garlic cloves and a second bouquet garni. Roast for one and a half hours in an oven preheated to 356°F, basting frequently with the juices that accumulate.
Step 2
Once the chicken is cooked, remove it from the oven along with half of the garlic, wrap it in foil, and place it in a warm spot.
Step 3
Add 100 ml of water and wine to the chicken dish. Place it on the stove and bring to a boil. Scrape the bits from the bottom of the dish and puree the garlic. Boil for 5 minutes, then strain through a sieve into a clean pot. Add olive oil and herbs, and season with spices to taste.
Step 4
Cut the chicken. Serve with the sauce, remaining garlic, and vegetables.
